Winemaker's Details:
Made from low yielding grapes off a single dry grown vineyard in the Pokolbin district of the Hunter Valley, this wine is only released when the vintage conditions produce grapes with a high intensity of flavour that is deserving of the label. After harvesting the grapes were fermented in an open vat and gently hand plunged to maximize flavour extraction. The wine was then matured in a mix of new and 1 year old American and French oak for 18 months. The nose exhibits plum and mulberry overlaid with the regional characteristics of leather and spice, along with nicely integrated vanillin oak that supports the fruit. The palate has a silky texture with soft tannins and a lingering finish.

Drinking Recommendations :
The savoury characters of Hunter Valley Shiraz provide an excellent match to a wide variety of food. It is a must with red meat dishes ‘slow’ cooked in a European manner, like osso bucco, ragout of veal or braised lamb shanks. However, this wine has the elegance not to overpower pasta or poultry dishes.
